    4 large eggs
    1/4 onion, sliced
    1/4 packages Gimme Lean Ground Sausage Style
    1 cup fresh spinach, fresh
    1 cup fresh broccoli, chopped
    1/4 cup 2% milk
    1/4 cup nonfat greek yogurt
    1/4 cheddar cheese, shredded
    1/2 T chili powder
    1/2 T oregano
    2 T dill
    1 T flaxseed
    4 basil leaves, chopped
    Salt and pepper to taste


1) Heat cooking spray in pan. Add onions and saute until soft.
2) Microwave ground "sausage" to give it a chewier texture. Add ground "sausage" to pan and brown.
3) Add vegetables and saute until cooked. Add spinach last, as it will shrink quickly.
4) In a bowl, whisk eggs with milk, yogurt, and spices (except for basil) until smooth.
5) Add egg mixture to pan and scramble for a few minutes until the egg is slightly cooked with wet egg still in between.
6) Pour mixture into a broil-safe pan and add cheese on top.
7) Broil until cooked through and the cheese is slightly browned.
8) Remove carefully, sprinkle basil on top, let cool slightly, then cut into fourths and serve!

Makes 4 servings (or two, if you're my husband and me!)
