Number of Servings: 12


    12 ouces boneless/skinless chicken breast
    (cut into bite sized chunks)
    1 package favorite frozen veggies (about 10 ozs)
    12 ozs (3 cups) whole wheat pasta (any shape)
    1 12 oz can fat free evaporated milk
    1 1/2 cup fat free shredded cheese
    1 1/2 cup reduced fat parmesan cheese
    1/4 teaspoon black pepper
    1/8 teaspoon garlic powder


Preheat oven to 400 and grease 13 x 9 baking dish with non-stick spray.
Cook pasta as directed on package adding frozen veggies to boiling water for about the last 30 seconds of cooking time; drain.
In baking dish: Combine chicken, evaporated milk, shredded cheddar cheese, 1 1/4 cup parmesan cheese, black pepper and garlic powder until well blended. Add pasta and veggies and stir until well blended.
Cover dish tightly with foil and bake for 20 minutes or until heated through. Remove the foil and sprinkle remaining 1/4 cup parmesan cheese over casserole. Let stand for about 5 minutes, serve and enjoy!
