I don't believe this has as much fat in it as the nutritional info states. I trimmed the roast pretty darn well, and there's just no way there is that much fat per serving. Ingredients

    Cilantro Lime Slaw (can double):
    1/2 package Cole Slaw mix
    1/2 cup mayo (I use light)
    1/2 cup cilantro
    1 tsp. minced garlic
    1/4 tsp cayenne pepper
    1/2 tsp salt
    1 tbsp lime juice
    1/2 tsp cumin

    Roasted Sweet Pork (can double):
    2-3 pounds pork shoulder
    10oz can red enchilada sauce
    10oz dr pepper (I use diet)
    1 tsp chili powder
    1/2 tsp cumin
    1/2 tsp salt
    1/2 tsp garlic powder (or 1 garlic clove)
    3/4 cup brown sugar
    1/4-1/2 onion, chopped
    1/4 c cilantro, chopped

Directions

For Pork: Trim the pork as much as you'd like. Combine all ingredients into a crockpot and cook on low overnight or until meat is tender.

For Slaw: Combine all but slaw in food processor. Mix desired amount of dressing with slaw mix no more than 30 minutes before serving.

Put meat and slaw into a tortilla and eat!
