Introduction

Throwing together a meatless meal with what I have on hand. The pesto used is homemade - so the calorie count may be off somewhat - but I figure most people don't make their own.

Throwing together a meatless meal with what I have on hand. The pesto used is homemade - so the calorie count may be off somewhat - but I figure most people don't make their own.

Ingredients

    2 oz angel hair pasta (I used Barilla Plus- for the nutritional info)
    3 large or one cup fresh mushrooms chopped
    1 large T basil pesto (about 1/2 of a 1/4 cup)
    1half cup cannellini beans
    1 cup fresh spinach
    2 t Parmesan cheese

Directions

Boil water and cook the angel hair according to directions.
Meanwhile chop mushrooms, spray a saute pan with olive oil pam. Begin sauteing the mushrooms. Add the beans, as they get hot add the pesto and mix well. Add the spinach and cover the pan until it wilts.

Once the spaghetti is cooked and drained. Plate - top with mushroom mixture then sprinkle with parmesan cheese.
