Number of Servings: 8


    1 pound extra lean ground beef or slivered sirloin steak
    1 TB olive oil
    1/2 pound portabella mushrooms, sliced
    1 medium onion (1/2 cup) minced
    1 can low sodium beef broth
    2 TB organic ketchup
    2 cloves minced garlic
    3 TB Wondra flour (for making gravies)
    1 cup low fat sour cream
    4 cups cooked whole wheat blend noodles


Add oil to large skillet and saute onions and mushrooms until tender. Remove from skillet. In same skillet brown meat until lightly browned, drain any fat. Reserving 1/3 cup broth add remaining broth, ketchup and garlic. Cover and simmer 5 minutes. Blend reserved broth and flour. Stir into meat and add mushrooms and onions. Heat and boil 1 minute. Turn off heat and add sour cream. Mix in noodles.
