    2.5 lbs. Boneless Chicken
    Taco Seasoning (2 packages)
    2 cans of diced tomatoes
    3 cups of shredded cheddar cheese
    1 can of diced chiles
    1 can of corn
    1 box of cornbread mix
    2 eggs
    1/4 sour cream


Clean chicken breast and cut into 1 inch cubes. Toss chicken, tomatoes and taco spices in a bowl. Add 1 cup of cheese and mix well. Spread mixture into a 13x9 casserole dish. Cover with green chiles. Spread remaining cheese over the top and set aside. Mix together all remaining ingredients in a bowl. Spoon mixture on top, spacing evenly. Bake at 350 degrees 50-60 minutes or until topping is golden brown and sauce is bubbling. Remove from oven and let stand fofor r 10-15 minutes.
