    Fresh pizza dough:
    3 cups of flour
    1 tsp of salt
    1 tsp of yeast
    2 tsp of sugar
    2 tblsp olive oil in mix
    2 tblsp olive oil to cover dough
    1 cup of warm water

    To top pizza:
    1 cup tomato sauce
    8 oz. of skim mozzarella cheese
    2 cups of fresh spinach
    1/2 cup of canned mushrooms


Makes 2 pizzas:

To prepare dough:
Mix warm water, yeast, salt and sugar in bowl for 10 minutes.
Next slowly add olive oil and rosemary and flour. Stir and knead dough into smooth round ball. Take ball and coat with last portion of olive oil and cover. After one hour knead dough to remove excess air. Dough is done after two hours. You can freeze the dough or keep in refrigerator for a few days.

Split the dough into two sections. Flour a clean area to roll into pizza crust shape.

Take one cup of fresh spinach and puree into tomato sauce.

Add the sauce to the top of dough, then add more fresh spinach, cheese and mushrooms.

Bake in 375 degree oven towards top rack for 10 to 15 minutes. Enjoy!
