    8 oz thin pasta (ie spaghetti or fettucine)
    1 13.5 oz can of unsweetened coconut milk
    3 Tbsp tomato paste
    1 tsp chili powder
    1 tsp salt
    8 oz bean sprouts (I just used two handfuls)
    4 Tbsp shredded coconut (optional)


Cook noodles according to package directions.
Meanwhile, in a large saucepan over medium heat, combine the coconut milk, tomato paste, chili powder and salt. Bring to a boil. Reduce heat and simmer for 2-3 minutes. Stir in the drained noodles and toss. Divide the noodles among individual bowls, add bean sprouts and shredded coconut if using.
