Ingredients

1 whole large egg
2 egg whites
3/4 C zucchini, diced
1 "spray" of olive oil cooking spray
1/8 avocado (if desired)
2 Tbs salsa (calories will vary with brand)
Chipotle seasoning to taste
Directions
Spray non-stick omelet pan with cooking spray, heat over medium heat.
Add zucchini and season with Chipotle seasoning to taste.
While zucchini cooks, beat egg + egg whites
When zucchini is done to desired tenderness (lightly browned is very tasty), add eggs.
Use preferred technique for omelet, frittata, or scrambled eggs.
Top with sliced avocado and salsa.
