great "fresh" tasting all year round. great "fresh" tasting all year round.
Number of Servings: 4


    1 can black beans - drained and rinsed
    1 tomato chopped
    1/2 - 1 avocado (only 1/2 in nutritional)
    1/4 onion chopped or shredded
    juice of 1 lime
    1tsp dried cilantro or a handful fresh - chopped
    1/2-1 tsp white vinegar as required
    dash pepper and salt


Mix all ingredients except vinegar in non metallic bowl,stire taste, if required add either more lime juice or a little white vinegar - let sit 30 min (or less if you don't have the time!)
option: add 1 c, thawed frozen corn.
