    2 medium sweet potatoes
    2 medium potatoes
    4 large carrots or 15 large baby carrots
    1 butternut squash
    2 tbsp. olive oil
    1 tsp. dried rosemary/garlic herb mix
    salt & pepper to taste


Preheat oven to 425 degrees. LIne a large baking sheet with aluminum foil.

Peel squash and remove seeds. Peel all vegetables and cut into 1 1/2 inch pieces. Combine vegetables in a large bowl; add olive oil and herbs and toss until vegetables are coated.

Spread vegetables evenly on baking sheet and roast until golden brown and tender, about 35-40 minutes. Stir once or twice during roasting. Serve hot.
