These fresh salmon burgers have a zing of citrus and fresh herbs, bringing out the flavour. These fresh salmon burgers have a zing of citrus and fresh herbs, bringing out the flavour.

    Atlantic Salmon Burger:
    500 grams fresh Atlantic Salmon, minced
    Quarter cup freshly chopped dill
    Quarted cup freshly chopped corriander
    half a lemon juice
    half a lime juice
    quater lemon zest, finelly chopped
    quarter lime zest, finelly chopped
    fresh cracke pepper to taste
    Olive oil, for cooking only

    1 egg white, whisked gently
    50 grams breadcrumbs (I made my own with 2 day old homemade bread)


In a medium mixing bowl, add the lemon juice, lime juice and both zests, corriander, dill and pepper. Mix gently
Add the salmon mince and mix through.
Roll into balls, about 3cm diameter.
Roll in whisked egg white and breadcrumbs.
Place into a hot pan with some olive oil and press down to about double size (approx. 6cm diameter)
Cook for 2 minutes and turn only once. Cook for a further 3 minutes and turn off heat.

Makes about 8 at this size.

Serve with a fresh slice of lime.
