Number of Servings: 8


    12 large egg whites
    8 oz frozen spinach (2.5 cups)
    1 cup blanched whole almonds
    3.25 oz boneless skinless chicken breast
    1 english muffin
    1 oz pepperjack cheese


Boil chicken (or other cooking preference)
Separate egg whites into a mixing bowl.
Run almonds through a food processor.
Mix almonds and spinach into egg whites.
Run chicken through a food processor or chop to desired size.
Mix chicken into egg white mixture.
Pour into a 9x13 pan prepared with nonstick cooking spray
Bake 20 minutes or until egg whites are cooked through.
Remove from oven and let cool. Cut into 8 squares and serve on english muffin with cheese or refrigerate for later.

To prepare sandwich, place one egg square atop an english muffin halve. Place one ounce of cheese atop the other english muffin halve. Place both halves in toaster oven to heat through.
