Good chili with a unique twist ... leave as-is for vegetarian meal or add chicken or turkey chunks. This is a great way to get your New Year's Day black-eyed peas :-) Good chili with a unique twist ... leave as-is for vegetarian meal or add chicken or turkey chunks. This is a great way to get your New Year's Day black-eyed peas :-)

Ingredients

    5 c black eyed peas, dried
    2 med. onions, diced
    5 clove garlic, chopped
    6 roma tomatoes, diced
    1 c roasted red peppers, diced
    1 yellow pepper, diced
    2 tbsp chili powder
    1 tsp hot sauce

Directions

Cook black-eyed peas for 30-45 minutes, until soft but not mushy. DO NOT drain.

Saute onions and garlic until soft. Add all ingredients to peas and stir well.

Can cook in pot on stove for 20 minutes, until all flavors have combined, or cook on low in crock pot 2 hours until hot and tasty.
