Ingredients

    *Cut up boiled chicken, 1c. light and dark, 3.5 serving (remove)
    Chicken stock, home-prepared, 3 cup (remove)
    Milk, nonfat, 4 cup (remove)
    *jiffy all purpose baking mix, 2 cup (remove)

Directions

Boil a whole or cut up chicken with salt and chopped onion till falls off the bone. Remove all skin and bones. Measure 3.5 cups mixed white and dark meat. Keep warm. Save the rest for another use. Skim fat from broth. (it helps if you chill the broth) Measure 3 cups of broth. Mix Jiffy mix with 2/3 cup milk. Pour remaining milk into pot with broth. Heat broth and milk to boiling. Reduce heat to a low simmer. Drop dough by spoonful into simmering broth. (smaller dumplings have more flavor than large ones.) Cook 10 min. Carefully turn dumplings and simmer 5 - 7 min longer. Add chicken. Serve. Makes 8 servings (about 1.5 cups per serving)
