Ingredients

    3 Tbsp. butter
    3 Tbsp. oilive oil
    3 medium onions, sliced (Or 1 Spanish onion), sliced thin
    1 Tbsp. garlic, minced
    salt and pepper
    3 sweet potatoes, peeled and cut into 1 inch pieces
    2 sprigs fresh rosemary
    1/2 c. ricotta cheese (let come to room temperature)
    3 Tbsp. maple syrup

Directions

Heat oil and butter in stoxk pot. Add garlic and onions. Season with salt and pepper. Cook until soft. About 6 minutes. Add the rosemary for another minute or two. When you smell the rosemary, add the broth and sweet potatoes. Bring to a boil, then redue heat and let simmer until the sweet potatoes are very tnder. About 20 minutes. Remove from heat, remove rosemary sprigs, and puree until smooth. Season with salt and pepper. Whisk in the ricotta cheese and maple syrup. This recipe made 11 cups; 1 cup = 1 serving.
