Introduction

Creamy, tender pork medallions. Great cooked fresh and leftover. I love to serve this with barley risotto and fresh asparagus. Creamy, tender pork medallions. Great cooked fresh and leftover. I love to serve this with barley risotto and fresh asparagus.

Ingredients

    2 pork tenderloins, 12 oz each
    5 tbsp w.w. Flour
    2 tbsp olive oil
    2 onions, chopped
    1garlic clove, minced
    1/4 c Dijon mustard
    1 1/4 c skim milk
    1/2 c white wine
    1 tbsp fresh tarragon

Directions

Slice pork into 3/4" medallions. Press flatter between your palms. Dredge pork in 3 tbsp of ww flour. Heat 1tbsp of oil in large non stick frying pan. Cook pork until golden brown on both sides, 5-7 minutes. Remover to plate. In same frying pan, heat 1 tbsp oil,add onions and garlic. Cook a few minutes. Add 2 tbsp ww flour, stir to coat onion. Stir in milk, wine. Cook, stirring, until thickened. Stir in tarragon. Add pork to pan and cook until heated through, about one minute. Enjoy!
