    2 Bunches Fresh Parsley, chopped w/o stems
    2 T Fresh Mint, chopped
    1 Medium Onion, finely chopped
    6 Medium Tomatoes, diced
    1 T Salt
    1/2 t Black Pepper
    1/2 c Bulghur Wheat, medium grade
    6 T Fresh Lemon Juice
    6 T Olive Oil


Soak bulghur wheat in cold water for 2 hrs or until soft.
Squeeze out excess water from bulghur.
Combine all ingredients except oil, lemon, salt & pepper.
Whisk together oil, lemon, salt & pepper and drizzle over salad.
Stuff it in a hot pita.
