Ingredients

8 oz. light Ricotta cheese
1 large egg
1/2 C grated parmesan cheese
3 oz. baked ham, chopped fine
1-1 lb bag frozen vegetables, Italian mix
12 no-boil Lasagne Noodles
2-14.5 oz, cans original Diced Tomatoes
1-8 oz. can tomato sauce
2 tsp. Italian Seasoning
Directions
Preheat oven to 375 degrees. Spray 13x9-inch baking dish with non-stick spray; set aside.
In 1-qt bowl, combine ricotta, egg & parmesan cheese; set aside. Cook frozen vegetables in microwave for 3 minutes; cool slightly and chop to no bigger than 1/2-inch size pieces; set aside.
In bowl, mix together both tomatoes and seasoning; set aside.
In prepared baking dish spread 2/3 C. of tomatoes in bottom. ** Layer 4 noodles over sauce. Spread 1/2 of ricotta mixture over noodles; then 1/2 of vegetables, 1 1/2 oz. of ham, 3/4 C tomato mixture & 4 oz. Mozzarella Cheese. Repeat 2nd layer from **. Lay last 4 noodles on top of all; top with remaining tomato mixture and remaining 4 oz of cheese.
Cover with foil and bake for 1 hour; removing foil for the last 15 minutes of baking to allow the cheese to brown. Rest for 10-15 minutes before cutting and serving.
