    1/3 cup Atkins Bake Mix (1/3 cup, 40g)
    1/3 cup heavy whipping cream, liquid
    1/4 cup water [to thin batter]
    1 Egg, fresh
    1 packet Splenda
    1/2 teaspoon Baking Powder
    1 tablespoon butter [for coating pan]


Pancake Directions:
Blend all dry ingredients together in a bowl. Add the cream,water, and egg. Whisk batter. Let the mixture sit for at least 5 minutes to activate the baking powder. Coat pan with a little butter [reserve rest for 2 more times unless you are using a griddle]. Cook the pancakes on the pan using medium heat. Flip the pancakes when bubbles appear on top and edges start to cook. Recipe makes 3, 4 inch pancakes [1 serving]. About 3 Net Carbs per pancake
