Ingredients

    2 cups dried black beans
    10 cups water
    1 tsp pepper - (or use canned beans)

    1/2 c unsalted butter
    2 med anaheim chilies, seeded , chopped
    3/4 c chopped red onion
    3/4 c chopped celery
    3/4 c chopped red pepper
    1 large leek - chopped white only
    3 garlic cloves
    2 tsp oregano fried & crumbled

    1/4 cup corn flour (we used corn meal in grinder)
    1 tsp cayenne
    2-1/2 Tb ground cumin
    2 Tb ground coriander
    1 tsp salt

    1/8 c sugar
    4-1/2 cup chicken broth
    2-1/4 cup frozen corn, thawed
    4 cups chopped turkey or chicken

    Toppings: grated cheddar cheese, red onion, sour cream, fresh cilantro.

Directions

Makes 8 servings.

Cook veggies in butter about 10 min. Add spices & corn meal-flour, cook 5 min. Add the sugar and 4 cups broth - bring to simmer. Puree 1-1/4 cup corn with the remaining 1/2 cup stock. Add to chili. Add 2 cups of cooked black beans, 4 cups of chicken, and remaining cor. Simmer 25 min.
