Ingredients

    1 clove garlic-minced
    1 medium onion-minced
    3/4 cup uncooked brown rice (not minute rice)
    1.5 cups chicken broth
    16 cups fresh or 24 oz. frozen spinach
    2 cloves garlic-minced
    2 cups cooked black beans
    2 tablespoon chili powder
    1 tablespoon cumin
    1 cup reduced fat shredded cheddar cheese

Directions

-saute 1 clove garlic, medium onion, uncooked brown rice in 0.5 tbs. olive oil until onions are tender.
-add chicken broth, bring to boil, then simmer, covered for 40 min.
-saute spinach and 2 cloves garlic in pan with1 tbs. olive oil
-in seperate bowl, mix cooked black beans with chili powder and cumin
-in a 2.5 quart casserole dish, layer ingredients: half of spinach, all of rice mixture, all of beans, rest of rice
-sprinkle cheddar cheese on top, cover and bake at 375F for 45 min (or heat in microwave 10 min, let stand 5 min.)
