    1/2 lb Turkey Breast - cut into bite size cubes
    1 tsp Olive oil
    1 c shredded Carrots
    4 T Cilantro, fresh
    4 Omega 3 eggs
    3 T Coconut Milk
    1/2 tsp ground Coriander


Serves 3

Heat olive oil over medium in non-stick skillet.
Add onions - cook 3 minutes.
Add turkey, cilantro and carrots - cook for 2 minutes.
Sprinkle with salt & pepper.
In bowl---mix eggs, coconut milk and coriander.
Add egg mixture to skillet. Cover with lid, turn heat down to medium low. Cook for 10 minutes or until fully set.
