    1 cup quinoa
    3 mini sweet peppers ( one yellow, one orange, one red)
    3 green onions
    1 Tbs minced garlic
    2 cups low fat chicken broth
    2 cups chopped brocoli
    1 tbs olive oil


Saute sliced peppers, onions and garlic in olive oil until tender add broccoli and chicken broth. Add rinsed quinoa. salt & pepper to taste. bring to boil cover and simmer on low till all liquid has been absorbed and quinoa and broccoli are done.
