Introduction

Ingredients

1 can salmon , drained (14.75 oz)
3 egg whites, lightly beaten
1 tablespoon light mayo
1/2 cup panko bread crumbs
1/3 cup finely diced celery
1/4 cup finely diced onion
2 teaspoons grapeseed or olive oil
1 cup frozen chopped spinach, thawed
1/4 teaspoon dried rosemary
1/2 teaspoon paprika
salt & pepper, to taste
a few squirts of lemon juice
Directions
Saute celery and onions in oil until tender. Squeeze liquid from spinach and chop finely. Drain salmon; remove skin and bones if desired. Mix all ingredients together in large bowl. Use 1/3 measuring cup to portion. Pat lightly to shape. Spray heavy skillet and allow to get hot before adding patties. Cook for four minutes per side on medium heat or until nicely browned. Makes about 7 patties.
