    2 T olive oil
    1 c chopped onion
    4 c shredded mushrooms
    3 c vegetable broth
    1 c uncooked barley
    salt and pepper to taste


Saute onions in olive oil (about 5 min), then add mushrooms and saute (about 5 min). Add broth, barley, seasonings and cook in partially coverd pan on low heat approximately 60 minutes.
