Ingredients

    15 chicken leg and thigh quarters
    1 lb dry pinto beans
    1 can Old El Paso Chopped Green Chiles
    2 cloves garlic
    2 Tbsp chile powder
    1 Tbsp cumin
    1 Tbsp salt
    1 tsp oregano

Directions

Remove skin and extra fat from the chicken leg quarters. I also like to remove any backbone that is attached, that is up to you. Put everything into a roaster pan and cover with water. Cover with a tight fitting lid--this is important so it won't dry out. Bake at 275* for 10-12 hours. If it has too much liquid then place it on top the stove and boil until desired thickness. This will thicken as it cools. Makes enough for the whole neighborhood, or you can freeze the extra. Sometimes I will leave the liquid and eat as a thick soup, other times I boil off the liquid and use as a burrito filling.
