Introduction

This one's a kid pleaser!!! This one's a kid pleaser!!!

Ingredients

    Macaroni 4 cups

    Campbell's Cream of Chicken Soup (98% fat free) 1 cup

    Milk, nonfat 1 cup

    Cheddar Cheese, Low Fat, shredded 2 cups

    Colby and Monterey Jack Cheese shredded 2 cups

    Country Crock, regular 3 tbsp

    Ham, extra lean, (5% fat) 2 cup, diced

    Small yellow onion chopped

    Garlic chopped 3 cloves

Directions

Makes approximately 6 adult portions of entree.

Preheat oven to 350 degrees

1) Begin a large pot of water boiling with salt and a tablespoon of margarine or oil.

2) Dice ham in to .5 inch or smaller cubes. Mince onion and garlic.

3) Once water has reached a roiling bubble, slowly add macaroni noodles.

4) In a medium size skillet, place 1 teaspoon of margarine and let melt.

5) Once margarine has melted add garlic and onion.

6) When the onions are soft, add the ham chunks and continue to stir frequently until everything is heated throughout.

7) When macaroni is nearly completely cooked, remove from heat and drain using a colander.

8) Stir in remaining margarine until all noodles are coated.

9) Then stir in 1 can of low fat cream of chicken (or mushroom) soup, milk, and 1.5 cups of Cheddar and Colby Jack shredded cheese (save approximately .5 cups of each)

10) Then stir in the ham mixture.

11) Pour into baking dish and sprinkle remaining cheese on top.

12) Place in oven and bake until cheese melts, put under broiler if you prefer your cheese a bit brown.

Other alternative would be to mix in your favorite vegetables, different types of meat or cheeses, and more varied seasonings.
