Ingredients

    2 cups Spring mix lettuce
    1 Grilled chicken breast, cut into bite size pieces
    1/6 cup Craisins
    2 tbsp Red onion, chopped or thinly sliced
    1/2 Apple, chopped or thinly sliced
    2 tbsp Sunflower seeds
    1/8 cup Reduced fat crumbled blue cheese
    2 tbsp Balsamic vinegar
    1 tbsp Extra virgin olive oil
    Pepper to taste

Directions

Whisk together balsamic vinegar and olive oil to make dressing for salad. Combine all other ingredients, and toss to combine. Add pepper to taste. Makes 1 large salad.

Some optional ingredients/substitutions:
Walnut, pine nut, almond, etc. substituted for sunflower seeds
Grapes
Pear
Feta cheese
Celery
