Number of Servings: 4


    1 pound boneless skinless chicken breast tenders
    1 large apple, diced
    1 small onion, diced
    1 celery stalk, diced
    1/2 cup golden raisins
    1/2 cup dried cranberries
    1 cup apple juice
    2 bay leaves
    1/2 teaspoon rosemary
    1/2 teaspoon thyme
    Salt & pepper to taste


Add the apple juice, fruit, and vegetables to the crock pot first. Put the rosemary, thyme, and bay leaves into the liquid. Place the chicken tenders on top of the fruit & veggies. Add a dash of salt and pepper to the chicken. (Specialty "chicken seasoning" blends work well, too).

Put the lid on the crock pot, and let it cook on low heat for 4 hours.

Makes 4 servings.

(Very tasty served with cornbread stuffing)
