Ingredients

    8 eggs (whisked)
    1 container sliced mushrooms
    1 cup sliced leeks
    4-5 oz. goat cheese
    1 Tb. butter

Directions

Whisk eggs in bowl. In oven proof skillet, saute leeks and mushrooms on medium heat. Add in whisked eggs and crumble in goat cheese. Mix in skillet to incorporate. Let cook in skillet on medium heat until edges start to form. Throw in broiler for 2 minutes to finish cooking the top.
