Ingredients

    1 pkg (12 oz) San Giorgio Jumo Shells, uncooked
    4 c. park skim ricotta cheese
    2 c. shredded part skim mozzarella cheese
    0.75 c. grated Parmesan cheese
    2 eggs
    1 T. chopped fresh parsley
    0.75 tsp. dried oregano leaves
    0.5 tsp. salt
    0.25 tsp. ground black pepper
    3 c. (about 26-oz jar) spaghetti sauce

Directions

Heat oven to 350°F.
2. Cook shells: Add 1 T. salt to 5 qt. water and bring to a rapid boil. Add full box of shells and stir; return to rapid boil. Cook uncovered for 10 mins, stirring occastionally. Drain well. Separated cooked shells and lay on wax paper or aluminum foil to keep from sticking.
3. Combine cheeses, eggs, parsley, oregano, salt, and pepper. In 13x9x2" baking dish, apread 1/2 c. sauce. Fill each cooked shell with about 2 T. cheese mixture. Layer one-half of filled shells in prepared baking dish; spread one-half remaining suace over shells. Layer remaining filled shells over sauce; spread remaining sauce over shells. Sprinkle with additional Parmesan cheese, if desired.
4. Cover with foil. Bake 35 mins or until hot and bubbly.

Makes 10 servings of 4 shells.
