    3/4 cup brewed coffee (or 2 tbsp instant mixed into 3/4 cup hot water)
    1/3 cup tomato sauce
    3 Tbsp soy sauce
    2 Tbsp lemon juice
    2 Tbsp wine vinegar
    1/2 cup brown sugar
    1 1/2 lbs tofu cut into slices (can also be made with 8 chicken breasts, halved and skinned)


Mix the coffee, tomato sauce, soy sauce, lemon juice, wine vinegar and brown sugar. Simmer in pot for 5 minutes. Arrange the tofu in a 9x13 baking dish or casserole. Pour the simmered sauce over the tofu (keep some aside for basting) and bake at 350F uncovered for one hour, basting occasionally.

Not recommended for low-sodium diets. Makes 6 servings.
