Pan seared tilapia, topped with Fajita style veggies. Pan seared tilapia, topped with Fajita style veggies.
Number of Servings: 4


    1 lb of Tilapia filets (3 to 6 filets)
    1 Medium Red Bell Pepper (juienne)
    2 Jalepeno Peppers (jullienne)
    1 Medium Tomato, chopped
    1/2 Medium red Onion Sliced
    1 jumbo Garlic clove, Chopped
    4 Tbsp Olive Oil
    1 cup Fresh Cilantro chopped
    2 oz Lime Juice
    1 tsp salt
    1 tsp Pepper
    pinch Epazote
    1 tsp Old Bay seasoning


Add 2 Tbsp Olive Oil to saute pan and add garlic. Saute long enough to flavor the oil. Add the red pepper, Jalepeno, tomato, and onion and saute on high to med-high until they begin to soften. Season with salt and pepper and add a slpash of lime over the top of the veggies.
Add 2 Tbsp Olive oil to another pan. season the fish with salt pepper, old Bay seasoning, and pan sear on high heat. Splash the rest of the lime juice on the fish and flip. Once the fish is flipped, top with the veggies and fresh cilantro. Cover for 3 to 4 minutes to wilt the cilantro. Serve with side of choice.
