Ingredients

    2 cups cooked medium grain rice
    1 x 300g pork fillet, trimmed & halved
    4 star anise
    2 sticks cinnamon
    100g shiitake mushrooms, chopped
    1 Tbl orange zest
    1/4 cup oyster sauce
    1 Tbl hoisin sauce
    1/4 cup Chinese rice wine
    Thai basil leaves to serve

Directions

Preheat oven to 200C. Cut 2 x 20cm x 30cm pieces of non-stick baking paper. Place each piece of paper on a separate tray and divide the rice, pork, star anise, cinnnamon, mushrooms and orange zest between the papers. Place the oyster suace, hoisin and rice wine in a small bowl and stir to combine. Spoon the mixture over th epork and fold the edges of each piece of paper to enclose. Bake the parcels for 20-25 minutes or until the pork is tender and cooked through. Carefully open the parcels and top with the basil leaves to serve,
