Ingredients

    2 cups flour
    1 tsp. baking powder
    1/2 tsp salt
    2 tsp cinnamon
    3 eggs, beaten
    2 cups sugar or 1 cup sugar and 1 cup slpenda
    1/2 cup canola oil
    1/2 to 1 tsp vanilla
    5 cups apples, peeled and sliced
    1/2 cups chopped nuts (optional)

Directions

1. Set oven to 350 to heat up.
2. Peel and slice 5 cups of apples
3. Grease a 9x13 pan or spray with Pam
4. In a medium size bowl mix: flour, baking powder, salt and cinnamon.
5. In a large bowl mix eggs, sugar, oil and vanilla until well blended ( may use a blender on low speed).
6. Add the dry ingredients to the egg/sugar mixture in the large bowl. Stir until well blended. The batter is not like regular cake batter....more stiff and sticky. Add the apples and nuts (optional) and stir until blended.
7. Put batter in greased 9x13 pan and sprinkle sugar on top. Bake for 1 hour at 350.
8. Cool and cut into 4 rows by 6. Yield 24 pieces of cake.

Cake is great alone or served with ice cream or coolwhip.
