Ingredients

    for the apple cake thing:
    -2 T unsweetened applesauce
    -1/4 apple finely diced
    -1 T quick oats or rolled oats
    -1 T flaxmeal
    -1 T unsweetened coconut flakes
    -1 T raisins
    -1 1/2 t pumpkin seeds
    -cinnamon to taste
    -pinch of salt

    for yogurt sauce:
    -1 t honey
    -1 t organic PB smooth
    -1 T nonfat greek yogurt
    -cinnamon to taste

Directions

makes one serving
mix all ingredients for apple scramble and place blob into oil/cooking sprayed pan on medium low. form into a pancake shape with spatula. it will be gooey! flip a few times and cook until it starts to brown. you'll probably have to reshape it each time you turn it....it's not really a pancake so much as a scrambley thing.
top with yogurt sauce

yogurt sauce:
melt peanut butter and honey in microwave. mix in yogurt and cinnamon. that's it!
