    4 eggs
    2 egg whites
    2 tbsp vanilla extract
    1/2 cup full fat coconut milk
    2/3 cup unsweetened applesauce
    1 1/2 cups almond meal
    1/2 cup coconut flour
    1/4 tsp sea salt
    1 tsp baking soda
    1 tbsp cinnamon
    dash of nutmeg.


Heat waffle iorn.
Beat egg whites until soft peaks form.
Combine all wet ingredients. Mix all dry ingredients and add all at once to the wet. Mix. Fold in the egg whites.
Cook in waffle maker.

Makes 8 waffles. 2 per serving

OPTION: Top with a drizzle of melted coconut oil, yogurt and fresh berries
