Number of Servings: 4


    4 cups Peeled Diced Potatoes
    1 1/2 cup Skim nonfat Milk
    1/4 Whole Wheat Flour
    1 medium Red Onion Diced
    1 tbsp Unsalted Butter
    1/2 tsp Black Pepper
    1 tsp Dried Basil
    1 tsp Minced Garlic
    1/4 tsp Celery Seed
    1/4 tsp Red pepper


Peel and dice Potatoes and onion. Cover potatoes with water while cooking rue. Melt butter, whisk in flour until blended then stir in 1 cup milk until smooth. Cook over medium heat until thick like gravy then add black pepper. Drain potatoes and place half in greased baking dish. Sprinkle with half the diced onion and all the basil, celery seed, minced garlic and red pepper. Pour rue over all. Now Add remaining potatoes and then remaining onion. Pour remaining milk over entire mixture. Cover and bake at 350 for1.5 hours. Makes four servings.
