    4 boneless, skinless chicken breasts
    2 T flour
    1/2 t salt
    1/2 t garlic poweder
    1/8 t black pepper
    3 T olive oil, divided
    2 cups of fresh sliced mushrooms
    1/2 cup Holland House Marsala cooking wine
    1/2 Swanson 99% fat-free chicken broth
    1 T basil
    1/2 t onion powder


Flatten chicken to 1/4 inch thick between sheets of waxed paper.

In plastic bag, combine flour, salt, garlic powder, and black pepper. Toss with chicken to coat.

Heat 2 T of olive oil in skillet over medium-high heat. Saute 3-5 minutes per side. Remove.

Heat 1 T oil and mushrooms. Saute for 3-5 minutes. Stir in remaining ingredients and bring to a boil.

Reduce heat to low, return chicken to skillet. Simmer for 5 minutes.

Makes 4 servings.
