    4 Tbs olive oil (or butter)
    1.5 cups chopped onion
    1 medium bell pepper, chopped
    4 cups broccoli, chopped (can use other veggies too)
    1 cup broccoli florets, thinly sliced (can also use other veggies here)
    1 tsp salt
    1 dash black pepper
    1 pinch allspice
    1 bay leaf, medium whole
    dash soy sauce (I use Tamari)
    dash of crushed dried thyme (or crushed dried basil)
    3 cups water
    3 tsp chicken bouillon
    1 can milk, 2% or less


Serves 6
Saute onions in olive oil with bay leaf, until onions are transparent. Add bell pepper, chopped broccoli, water, bouillon, salt and other spices. Cook about 10 minutes, covered, until broccoli is tender but still bright green. Puree in blender little by little, adding the milk. Pour back into pot and add sliced florets. Cook a few minutes until the florets are bright green. This may sound a bit complicated, but by using a food processor and/or a blender, it is quite fast and easy. This soup is very versatile because you can use any vegetable that you like such as cauliflower, carrots, celery, etc.
