Ingredients

    4 c low-sodium vegetable broth (or chicken broth)
    1.5 c water
    2 c bulgur wheat
    1 medium onion, diced
    1 lb (2 large) sweet potatoes, peeled and diced into 1/2-inch cubes
    2/3 c grated Parmesan
    2/3 cup sliced almonds, toasted
    1/2 tsp ground cinnamon
    Pinch ground nutmeg
    1 tsp salt
    Freshly ground black pepper

Directions

Preheat oven to 350. Lightly grease a 9x13 glass baking dish.

In a medium pot, bring broth and water to a simmer. Keep simmering while other ingredients are prepared.

To a large mixing bowl, add bulgur heat, onion, sweet potatoes, parsley, Parmesan, and 1/3 c almonds. Stir. Add cinnamon, nutmeg, salt, and black pepper to taste. Stir to combine again.

Pour mixture into prepared baking dish. Pour heated broth over wheat bulgur mixture. Cover tightly with two layers of aluminum foil. Bake 50 minutes. Uncover, sprinkle with remaining almonds, and bake 15 more minutes. Remove from oven. Let stand for 10 minutes before serving.

Makes 6 main courses or 8-10 side dishes.
