    1 pound dried Great Northern beans
    2 medium onions, chopped
    1 Tablespoon olive oil
    3 (4.5 oz) cans chopped green chilies, undrained
    4 garlic cloves, minced
    2 teaspoons ground cumin
    2 teaspoons dried oregano
    6 cups chicken broth
    5 cups chopped cooked chicken breast
    3 cups shredded hot pepper cheese
    1/2 tsp salt
    1/4 tsp pepper
    1/4 cup chopped fresh cilantro (optional)


1. Sort and rinse beans. Cover with water. Let soak overnight. Drain and set aside.
2. Saute onion in hot oil until tender. Add green chilies and next 3 ingredients. Cook 2 minutes, stirring constantly.
3. Add beans and chicken broth.
4. Bring to a boil. Cover and reduce heat. Simmer 2 hours or until beans are tender.
5. Add chicken, 1 cup cheese, salt, and pepper. Bring to a boil. Reduce heat and simmer uncovered for 10 minutes, stirring often. Stir in cilantro, if desired.
6. To serve, top each 1 cup serving with remaining cheese. Makes 12 1 cupservings.
