    Corn Tortillas, 15 tortilla, medium (approx 6" dia)
    Ground beef, lean, 16 oz
    *Refried Beans Old El Paso, 2 cup
    Red Ripe Tomatoes, 2 slice, medium (1/4" thick)
    Green Peppers (bell peppers), 0.5 cup, chopped
    Onions, raw, 1 slice, medium (1/8" thick)
    *Green Chili Peppers, canned, 0.5 cup
    Cheddar Cheese, 2 cup, shredded
    Chili powder, 1 tbsp
    *Cumin seed, 1 tsp
    Paprika, 1 tsp
    Salt, 1 tsp
    Pepper, black, 1 tsp
    pepper, red 1/2 tsp
    canned enchilada sauce


Chop vegetables. Brown ground beef. Add onion, tomato, peppers, and seasonings. Sautee. Add a quarter of the enchilada sauce to the pan. Spray 10x14 pan with oil. Place a layer of tortillas. Add beef and a hint of cheese. Add a layer of tortillas. Spread refried beans and a quarter of the enchilada sauce over tortilla. Add a final layer of tortillas and top with enchilada sauce and cheese.
Bake at 350 for 30 min
