    2 cups flour
    1 tsp salt
    1/4 cup splenda
    2 TBS sugar
    4 tsp baking powder
    1/4 cup eggbeaters or egg substitue
    1 cup skim milk
    1/4 cup oil
    1 cup wild blueberries


Mix dry ingredients. Mix egg, milk and oil. Add wet ingredients to dry ingredients. Stir gently to mix; do not beat. Gently fold in blueberries (to keep batter from turning purple you could lightly coat them with flour first). Bake in greased and floured muffin cups at 475 for 10 to 15 minutes, depending on your oven. Yield 12 muffins.

(Hint: for milk-free, I substitute orange juice or orange juice/water mix and increase the baking powder to 5 teaspoons)
