Ingredients

    1 small onion
    ¼ c plus 3 T ketchup, divided
    1&1/4 lbs lean ground turkey
    3 c bagged dry broccoli coleslaw, roughly chopped
    ½ c fat-free liquid egg substitute
    ½ c quick-cooking oats
    2 tsp garlic powder
    1 tsp salt

Directions

Preheat oven to 350 degrees.

Chop or grate onion.
Add ¼ cup ketchup and all other ingredients.
Stir until thoroughly mixed.

Spray 12- cup muffin pan with nonstick spray.
Evenly distribute turkey mixture among muffin cups and top each with 1 teas ketchup.

Bake for 30-35 min, until firm with lightly browned edges.
Let stand for 5 min before serving.
