Ingredients

    * Lentils, 2 cup
    * Turmeric, ground, 1 tsp
    * Red Ripe Tomatoes, 4 grated (no skin)
    * Onions, raw, 2 medium (2-1/2" dia) chopped
    * Garlic, 2 clove
    * Parsley, 1 tbsp minced
    * Cilantro, raw, 1 tbsp minced
    * Paprika, 1 tsp
    * Cumin, 1 tsp
    * Canola Oil, 2 tbsp
    * Chicken, Vegetable or Beef Bouillon, 2 tsp
    * Water, 2 cup (8 fl oz)

Directions

Mix all ingredients and cook in pressure cooker until beans are tender (about an hour). **Can be vegetarian or vegan if you choose vegetarian bouillon. Serves 4.

    This was really good. Moroccans are known for their well-seasoned stews, and this lentil tagine is a healthy epicurean delight. Add lamb for the total Moroccan experience. Kul, kul! - 3/15/11
