Number of Servings: 4

Ingredients

    2 chicken breast, no skin
    2 egg whites
    1/3 cup Bread Crumbs
    I can tomato paste
    1 can stewed tomatoes
    1 1/4 cup water
    2 clove garlic, minced
    1/4 small onion, chopped or minced
    3 tbsp oregano
    1 tbsp basil
    1 tbsp celery salt
    2 tbsp balsamic vinegar
    2 tbsp parsley
    2 slices mozzarella cheese
    3 cups pasta of choice

Directions

whip egg whites and pour onto plate
soak chicken breasts in egg whites
on another plate spread out bread crumbs and flip chicken breast over several times to cover chicken completely
preheat oven to 425 and put chicken in paking pan/glass casserole dish
cook for 20 minutes, flip breasts and cook and additional 7 minutes
turn off heat, add cheese to topside of chicken breast, let sit until melted/almost crispy brown
HOMEMADE SAUCE:
saute minced garlic and onion, adding balsamic vinegar and then rest of spices
add tomatoes, then paste and water
cook on high until boiling and then simmer for 10 minutes. Serve over pasta.

    Incredible!
    Was wonderful! Made pretty much according to directions, except I took the fully cooked chicken out, mixed the pasta & sauce (sauce was excellent!), put on the bottom of the casserole, put the chicken back on top, added cheese, turned off heat abt. 10 min. Will make again! Thanks - 9/28/10
