    2 eggs
    1 slice turkey, diced
    1 Tbs. shredded reduced-fat Mexican Cheese blend


Stir 2 eggs with a fork until white and yolk are well blended. Add remaining ingredients. Microwave for 2 minutes and 30 seconds or until the eggs are firmly set. Serves 1.
