Ingredients

    Orange juice (fresh from 1 orange)
    1 cup + 5 tbl Olive Oil
    3 tsp granulated sugar
    dash black pepper
    3 cloves garlic pressed
    2 boneless, skinless chicken breasts
    3 cups arugula
    2 cups leafy lettuce chopped
    1 cup chopped fresh celery
    1 pear, peeled and chopped
    1 orange, peeled and sectioned
    2 cups quina
    salt (optional)

Directions

Wisk together first 5 ingredients in medium size bowl. Place chicken breasts in large ziplock bag. Pour 1/2 marinade over chicken and place in refrigerator for 20 minutes (overnight will be even better!). Reserve remaining marinade to use as salad dressing.

Remove chicken from marinade and dispose of marinade. Salt to taste. Grill chicken breasts for 20 minutes or until done. Chop chicken into bite size pieces.

While chicken is marinating and cooking, cook quina according to package directions.

In large bowl toss arugula, lettuce, celery, pear, and orange. Top with chicken, quina, and toss with reserved marinade.
